Lemon Cake Pops

These are refreshing, delicious, and perfect for the warmer weather as summer is just around the corner!


As summer comes closer to being a reality, I tried to come up with a dish that screams summer. Once again, this is a dessert post and not a main dish post, as it should be. Summer to me is hamburgers, watermelon, hot dogs, and lemonade. I figured you can't make much out of hamburgers or hot dogs, watermelon is not quite in season yet, so lemonade was the perfect item to do a twist on.

I don't know about you, but I absolutely love lemon flavored items. Lemon bread, lemon squares, lemonade, lemon cookies, even lemon flavored water; I love it all! I'd never made cake pops before, but I knew the gist of it. I'd made Oreo balls before, and that was pretty similar, right? I was ready to tackle these lemon cake pops.



I had to go to the store to buy lemon cake mix, lemon frosting, and white chocolate (that's right, I used store bought cake mix and frosting, and I am not ashamed). I probably could have made the cake and frosting from scratch, but I was not feeling it. I started getting the cake made, and once they were already in the oven I realized I had not bought sticks for the cake pops.

I made these on a snowy day in April, perfect for my summery dish, right? I really did not feel like trekking out in the snow to find sticks for the cake pops, so I decided then that these would now be cake balls instead of cake pops. In hindsight, I will remember to get sticks next time because I am sure it will be much easier to dip the cake balls in the melted chocolate with a stick than with a fork.



Everything was going good until I started dipping the cake balls in the chocolate. I used way too much too fast, so I needed to melt some more. I microwaved the chocolate too much! I had to throw it away and make my way to the nearest grocery store to pick up some more.

After that little mishap, everything went smoothly. The cake balls taste delicious, but you can only eat one at a time; they are very rich! This is my last blog post, and I think these are the perfect send off. Who doesn't love cake pops?


Ingredients:

1 box lemon flavor cake mix

3/4 of a 16 oz lemon frosting

2 bags white chocolate chips

1 tbsp lemon juice

1 tbsp vegetable oil

sprinkles (optional)


Directions:

1. Bake the cake as directed and let cool for at least 2 hours.

2. In a large bowl, crumble the cake (smallest pieces possible) using your hands.

3. Melt the frosting for 30 seconds- 1 minute. Mix together with the cake and lemon juice.

4. Roll the cake batter into balls and place on wax paper. Allow to cool in fridge for 2 hours or 20 minutes in the freezer.

5. While the cake is cooling, melt chocolate in the microwave for 15-30 seconds at a time, stirring in between. Add vegetable oil as needed to thin out chocolate.

6. Take cake balls out of freezer and place in fridge.

7. Take one cake ball out of the fridge at a time.

8. Using a fork, dip the cake ball into the chocolate completely. Lift out of the chocolate and allow excess to drip off. Place back onto the wax paper.

9. While the chocolate is still wet, sprinkle the sprinkles on top. Allow chocolate to completely dry (about 5 minutes) before serving.
