Mini Fruit Pizzas

For this blog post, I decided to try something new! I love fruit pizza, but have not actually made it before. These mini fruit pizzas turned out just as delicious as I anticipated, and are definitely a new favorite!

In my previous blog posts, I have shared recipes that I have made before and enjoyed. For this blog post, I decided to try something new! Fruit pizza has been a long time love of mine, but I had never actually attempted to make it before. I was excited to make these mini pizzas to see if I preferred these over regular fruit pizza.

My sister and I love to bake, so we decided on this recipe together. We had to first go to the store to pick up our favorite fresh fruits. You can use whatever fruits are your favorite; we used strawberries, blueberries, and kiwi. Oranges, bananas, blackberries, raspberries, and pineapple are all delicious on the pizza, too!

I have had fruit pizza before that has actual pizza dough as the crust, instead of a sugar cookie. With my huge sweet tooth, I much prefer the sugar cookie. There are so many different ways to make fruit pizza to just your liking. My favorite way is the classic- sugar cookie, cream cheese frosting, and fruit. For the crust you can use a graham cracker crust, granola crust, pizza dough crust, a different cookie bottom, or even brownie. Instead of cream cheese frosting you can use regular buttercream, Greek yogurt, regular yogurt, cool whip, or vanilla pudding. The different fruit combinations on top are endless! There are so many ways to mix up fruit pizza and make it as healthy or as sweet as you want it.

Fruit pizza is so easy for anyone to make! I will provide my so easy recipe for delicious sugar cookies and cream cheese frosting. I guarantee with just one bite of these mini fruit pizzas you will be asking for more. That is the only downfall of this recipe- the serving sizes are smaller than a regular slice of fruit pizza. However, you can make these cookies as big or as small as you want.

This recipe is good for just about any kind of event. I made them for our Super Bowl party, but they can even be used for classier events. The possibilities of fruit pizza are endless, and they are all delicious. I hope you enjoy this recipe as much as I do!
Sugar Cookies-
Ingredients:
1 1/2 cups (3 sticks) butter
2 cups sugar
4 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract (optional, but I love mine with almond)
5 cups flour
2 teaspoons baking powder
1 teaspoon salt
Directions:
1. In a large bowl, beat together butter and sugar until fluffy.
2. Add eggs, one at a time. Beat until well combined (about 2-3 minutes).
3. Add both vanilla and almond extract.
4. In a separate bowl, combine flour, baking, powder and salt.
5. Add dry ingredients to the wet ingredients, about 1 cup at a time.
6. Once mixture has been fully combined, chill for around an hour, or overnight.
7. When you are ready to bake, preheat the oven to 400 degrees.
8. Take the chilled dough out to a clean, flat surface.
9. Cover the surface with a thin layer of flour for rolling. Cover rolling pin with a thin layer of flour also, so the dough doesn't stick.
10. Roll dough out until it's about 1/2 inch thick.
11. Lightly dust cookie cutters with flour and cut dough.
12. Bake for 6-7 minutes.
13. Allow to completely cool before frosting, or else it will melt right off!
Makes 5 dozen cookies

Cream Cheese frosting-
Ingredients:
1/2 cup (1 stick) butter
8 oz. cream cheese
4 cups powdered sugar
2 teaspoons vanilla extract
Directions:
1. Beat butter and cream cheese until well blended.
2. Add vanilla.
3. Add powdered sugar one cup at a time, until frosting is creamy.

Assembling Fruit Pizza-
Directions:
1. Cut fruit as desired.
2. Completely cover cooled cookies with cream cheese frosting.
3. Place the fruit on top of the frosting as desired.
4. Have fun with the placement! Use as many kinds of fruit as you can in as many different shapes as possible!

These are my absolute favorite sugar cookie and cream cheese frosting recipes that I have found. They are both from my favorite recipe website, allrecipes.com. I always make my directions simpler than theirs because I know I have no fun reading between the lines for the actual recipe. I hope this recipe is easy to read, fun to make, and most of all delicious to eat!
