This dish is oh so delicious and can all be made in one pan! Enjoy this little bit of summer sweet-and-spicy comfort food in the midst of this snow.

I have recently discovered this recipe and I absolutely love it. It is so delicious and even easier to make; you only need one pan! I found this recipe on my favorite recipe website, allrecipes.com. Hawaiian barbecue chicken is different than any other recipe I've made before. It has pineapple! I was skeptical of fruit being in such a savory dish at first, but I really love it in the meal, and I don't think it would be the same without it. I made it the way the recipe calls for first, but I found that I enjoyed the pineapple in smaller chunks than what the recipe actually called for.
I thought this recipe was perfect for this blog post because it reminds me of summertime. The sweetness of the barbecue sauce and pineapple, the spice of the peppers, and the crunchy green onions take me back to warmer times. This dish gives me hope for the summer! This foot-high snow we got over the weekend is not my forte. After shoveling snow for what seems like hours this weekend, I need something easy to make.

Keeping an easy dish in mind, this recipe is absolutely perfect. Maybe in a future post I'll include a recipe that takes a good amount of work if you find yourself bored, but for now we're doing easy. Easy and fast cleanup makes for a happy teen like myself! If you are a teen like me, you have a lot of homework and maybe even a job. You can whip up this dish in just as little as 30 minutes.

I really hope you enjoy this recipe! It is by far one of my favorite dinners, being the picky cook that I am. You can eat this dish over rice, which is what I do, with a side salad, or by itself. I also like to mix in a little more barbecue sauce after all is cooked, but that's just me! Here is the recipe, and I am sure you will enjoy!
Ingredients:
1 1/4 pound chicken breast, cut in 1 inch cubes
4 slices bacon, chopped
1/2 cup diced red onion
1 tbsp grated ginger
1 large red bell pepper, seeded and cut into 1 inch pieces
2 cups fresh pineapple chunks, 1 inch pieces
1/2 cup barbecue sauce
2 tbsp soy sauce
1/4 cup chopped scallions

Directions:
1. Place the bacon in a large skillet and set over medium heat. Break the pieces apart with a wooden spoon and cook until brown, about 5 minutes.
2. Add the onions and grated ginger. Sauté for 1 minute.
3. Add the chicken pieces, stir and cook for around 2-3 minutes.
4. Push the chicken to the sides of the pan and add the bell pepper. Sear the pepper for 1-2 minutes.
5. Then add in the pineapple chunks, bbq sauce, and soy sauce. Stir to coat and simmer for 2-3 minutes.
6. Sprinkle with scallions and serve over rice or with a side of your choice!
